Mom's Chicken Enchiladas

This was my most favorite dinner growing up, my mom has been making it ever since I can remember. ENJOY!!
Indredients:
2 cups grated cheddar cheese
8-10 flour tortillas
3 cans cream of chicken soup
2 packages lawry's enchilada seasoning mix
1 large tub of sour cream
3 cups shredded chicken (I usually do 4-5 pieces grilled chicken)
1 large can sliced olives
2 small cans mild green chilies, chopped
Directions:
mix the cream of chicken soup, enchilada seasoning, and sour cream together, cook over medium heat until heated through. In seperate bowl combine shredded chicken olives and green chilies. Grease 9X13 pan. Add small amount of sauce in the bottom. Heat tortillas in microwave for 30 seconds so they are easier to fold. Spoon small amount of meat mixture, cheese and sauce onto each tortilla. Roll up tortilla and put seam side down in the casserole dish. Continue with all tortillas. Pour remaining meat mixture sauce and cheese over the top.
AND of course a DASH OF LOVE
Bake Covered @ 350 degrees for 35-40 minutes.

Pizza Hut Pizza Dough

Ingredients:
1 1/3 cup warm water
1/4 cup non-fat dry milk
1/2 tsp. salt
3-4 cups flour
1 pack dry yeast
1TB oil
Directions: Put yeast, sugar, salt and dry milk in bowl. Add water and stir to mix well. Let sit for 2 minutes. Add oil and stir again. Add Flour and stir until dough forms and flour is absorbed completly.

Knead for 10 minutes. Let rise 30-60 minutes. (I usually put it in a bowl covered with plastic wrap) Roll out to desired thickness ADD tomato sauce (I used hunts and added some oregano and basil) and ANY toppings you would like.
AND of course a DASH OF LOVE!
bake @ 500 degress for 10-12 minutes.

Cook on metal pan coated with olive oil(spray pam if what I used) The more oil you use, the more like Pizza Hut's pan crust it will be.
The first time I made this I was so excited to make a thick crust, but it didn't turn out well
AT ALL. If you make the crust too thick it wont ever cook all the way through and you wont be happy with the way it turns out. So start off thin and experiment to find the perfect thickness for you.
This recipe also works great for making BREAD STICKS!!

add a little garlic and butter OR sugar and cinnamon:)
